Chocolate Brownies

So today thought I would do a little Sunday baking. I love making cakes and as I didn't have enough margarine to make rainbow cupcakes (which I am planning on blogging soon) I made some white chocolate chip brownies. This recipe is admittedly, one from a children's recipe book which I've had for SO long, but everyone always loves the brownies I make. Here we go!


For these delicious brownies you will need:

90g (3oz) plain chocolate 
125g (4oz) plain flour
15g (¹/₂ oz) cocoa powder

150g (5oz) unsalted butter + extra for greasing

100g (3¹/₂oz) chopped pecan nuts - optional (I replace this with chocolate chips)

300g (10oz) soft light brown sugar

2 eggs

1 pinch of salt
¹/₂ teaspoon baking powder
1 tsp Vanilla extract

Method:
Preheat the oven to 180˚ (350˚F gas 4). Grease and line the baking tin with non stick baking parchment.The recommended size tin is 8"x6".
Break the chocolate into a bowl and simmer in a saucepan with a small amount of water. Keep stirring and once the chocolate has melted add the butter until all is melted. Remove the bowl from the saucepan and allow to cool.

In a separate bowl sieve the flour, baking powder, cocoa powder and salt.


In a third bowl (make this the largest bowl) beat the eggs, then add the sugar and vanilla extract.



Mix the ingredients till they are just combined.

Fold the melted chocolate into the beaten egg mixture. Once mixed together it should be a thicker consistency.


Then fold the flour mixture and add the nuts/chocolate chips (or whatever you fancy). 




Spoon the mixture into the tin, smooth and bake. The recommended cooking time is 25 minutes however my oven temperature is a lot higher than what it's set to so I would usually set a timer and check halfway through baking and take it out when I think it's ready. It should be firm on the outside but gooey and fudge-like on the inside!


Allow it to cool in the tin before cutting it into squares.

Then sit back (once you've done the dishes of course!), relax, have a brownie and cuppa tea!
