Colourful Meringues

When in the UK I was shopping with my sister (Laura), brother in law and two nieces and I spotted these incredible meringues in a cafe window. They varied in colours (although not as bright as the ones you're about to see) and were bigger than your average meringue! This gave us inspiration to try and make some of our own. Myself and Laura had never made them with colours in before so it was fun watching youtube videos trying to find how to do it.

All you need is:
sugar
eggs (white)
food colouring of your choice
a piping bag
marshmallows (optional)

We used a basic meringue recipe found on the internet so the amount you use may depend on how many you want to make!

First thing you must do is pre-heat the oven!
Separate your egg yolk and put the whites into a clean mixing bowl.

Then whisk the egg whites until it it looks like a fully cloud. It will need to be able to stay in stiff peaks.

Once you've got it to that stage, add the sugar a bit at a time and keep whisking. It should be ready when it looks a bit thicker and should be glossy.

TIP: to stop the baking paper from sliding on the tray blob a bit of the mixture underneath like glue!

Grab your piping bag and food colouring. Using a paint brush paint stripes inside the bag.

Once you've got the colours you want all in stripes carefully add the mixture to the bag!

We saw on a tutorial someone put little marshmallows and then piped over them! (I'm not sure I would do this again)

Once you have piped them into the shapes and sizes you like put them in the oven! We had the oven on about 100C and took just over an hour I think, or just until they look a little brown and crispy!

Serve with a cup of tea or with some cream and fruit! We ate ours with a cuppa and also had some blueberry muffins we made the afternoon before! Perfect!
