Christmas Baking


It isn't christmas without the festive food! I purchased some really cute christmas shaped cutters which I couldn't wait to try out! I decided to make some shortbread, in these I used cinnamon (as mentioned below) to give a christmassy taste but you could alternatively use vanilla, orange, lemon or anything else you fancy. 

You will need:

100g golden caster sugar
250g salted butter
250g plain flour
125g cornflour or rice flour
1-2 tsp cinnamon (optional)

Method:

First you'll need to preheat the oven to 170°C/fan 160°C/340°F/gas mark 3½My oven is a lot hotter than it should be for a fan over so I had mine on about 130°C. Using an electric whisk, cream together the butter and sugar then add any flavouring you want at this point. Next sift the flour and cornflour gradually, mixing briefly between each addition (warning:this can be quite messy!). Now it it should be starting to stick together like a dough, flour your hands and gently kneed until smooth - do not over-work!! Cover the ball of dough in cling film and, if you have enough time to spare, leave to chill in the fridge for 30 minutes.


Roll out the dough on a floured surface then cut out the shapes you want. For this Christmas theme I used snowflakes and christmas trees. You could also use stars if this is for christmas biscuits! Place the shortbreads on a lined baking tray and cook for 15-20 minutes. Once out the oven leave to cool on a wire rack.


For a finishing touch sprinkle with icing or caster sugar. Alternatively a fun idea would be to pipe white icing onto them. If you're doing this with young children use bright colours to decorate the christmas trees and use sweets or chocolates to decorate!



Alternatively use a stencil of some kind to create icing patterns on the biscuits. I used these stencils which are meant for coffee/hot chocolate sprinkles, they worked really well.



You could make these as a christmas gift when visiting people just pop them in a tin or a box with a christmas napkin.
